Yerba Mate is an extremely popular herbal tea found in South America. It isn’t a true tea however, since it comes from the Yerba Mate tree.

It is unique in the way that it is served and made. To make yerba Mate, instead of teapots and cups, you use a gourd and bombilla. The gourds are used for drinking, and the bombilla is a straw made of metal that features a built in strainer.

Herb is placed in the gourd about 3 quarters full, and then hot water is poured over the herb, mostly submerging them. It needs to sit for a few minutes so that the herbs can suck up the water, and then more hot water is added so that it stays a liquid.

The bombilla is then placed into the wet herbs with the filter part down. Then the tea is drunk through the straw. If you wish, more hot water can be added until the tea loses its flavor.
